5月の初鰹を急なおもてなし料理にもピッタリのカルパッチョにしました。
初鰹にはたんぱく質の他、ビタミンB12・鉄なども豊富に含まれており、貧血予防も期待できます。
コチュジャンと日本酒をプラスした調味料でピリ辛韓国風に仕上げ、味にアクセントをつけました。
日本酒を加えることで、コチュジャンの辛味を緩和し、旨味もプラスしています。
かつおカルパッチョ
材料（2人分）
- かつお(刺身)
- 150g
- 水菜
- 1/2束
- 根深ねぎ
- 6cm
- (A)ごま油
- 大さじ1
- ┗しょうゆ
- 大さじ2/3
- ┗日本酒
- 小さじ1
- ┗コチュジャン
- 小さじ1
- いり白ごま
- 小さじ1
How to cook（作り方）
- 1.
- かつおは1.5ｃｍ角に切る。
- 2.
- 根深ねぎはみじん切り、水菜は長さ3cmほどに切る。
- 3.
- Ａを合わせる。(2)のねぎを加えて混ぜる。
- 4.
- 器に(2)の水菜と(1)のかつおを盛り、(3)をのせごまを散らす。
※アルコールが弱い方は、「日本酒」を「煮切り酒」に変更してください。
