ぷりぷり牡蠣のうまみたっぷり！
牡蠣の風味がスープにとけこんだ寒いこの時期にやさしい味の一品です。
牡蠣には肝機能を強化するグリコーゲンやタウリンが含まれているので、お酒を飲むことが多いこの季節にがんばる肝臓を手助けしてくれます。
牡蠣に日本酒をからめることで特有の臭みを消し、うまみを閉じ込めて風味豊かな贅沢スープに仕上げてくれます。
牡蠣のスープ
材料（2人分）
- 牡蠣
- 2個(40g)
- 日本酒
- 小さじ1
- かたくり粉
- 小さじ1
- 水(だし汁)
- 400cc
- こんぶ
- 1/2枚
- かつお節
- 一つかみ
- うす口しょうゆ
- 少々
- 塩
- 適量
- 貝割れ大根
- 1/2個
- ゆずこしょう
- お好みで
How to cook（作り方）
- 1.
- 牡蠣は水でさっと洗ってから、水気を切り、日本酒とかたくり粉をからめておく。
- 2.
- 貝割れ大根は根元を切り、洗って水気を切っておく。
- 3.
- 鍋に水を入れ、昆布を入れて火にかけ、沸騰したら取り出す。そこに、かつお節を入れて火を止める。かつお節がしずんできたら、ざるに濾す。
- 4.
- (3)のだし汁を鍋に戻して火にかけ、沸騰したら(1)を加えてさっと煮て、しょうゆと塩で味を調える。火を消す直前に(2)の貝割れ大根を加え、器に盛る。
※お好みでゆずこしょうを添える。
