大衆魚と称されるいわし。実は、DHAとEPAのほか、カルシウムの吸収を促すビタミンDも豊富に含んでおり、栄養価の高い魚です。今回は、いわしを骨まで食べられるつみれ汁にしました。だしに日本酒を加えることで、魚の臭みを緩和。また、日本酒のグルタミン酸と鰹だしに含まれるイノシン酸の相乗効果により、旨味が増強。優しい味に、心も身体も温まります。

- 2尾(300g)
- (A)日本酒
- 大さじ1
- ┗すりごま
- 大さじ1
- 大根
- 200g
- にんじん
- 1/2本
- 水菜
- 2株
- 鰹だし汁
- 3カップ
- (B)日本酒
- 大さじ2
- ┗みりん
- 大さじ1
- ┗塩
- 小さじ1/2
- ┗薄口しょうゆ
- 小さじ2
- 七味唐辛子
- 少々
How to cook（作り方）
- 1.
- いわしは頭と腹ワタを除き、手開きして手早く水洗いして水けをふきとる。中骨を身から外して皮をむき、尾ビレ、背ビレを取り除き、3～4cm幅に切る。
- 2.
- フードプロセッサーに(1)、Aを加え、なめらかになるまで混ぜ、ボウルに移す。
- 3.
- 大根とにんじんは皮を剥き4cm長さの短冊切りにする。
- 4.
- なべにBと(3)を入れアクを取りながら中火で煮る。
- 5.
- 野菜が軟らなくなったら、水にぬらしたスプーンで(2)をひと口大にすくって加える。
- 6.
- つみれが浮いてきて中まで火が通ったら、4cm長さに切った水菜を加えてサッと火を通し器に盛る。お好みで七味唐辛子をふる。
